Coffee simmered in a clay pot with cinnamon and piloncillo — the sample recipe that tastes like early mornings and long talks.
from the kitchen of Grandma [Placeholder]
Ingredients
- 2 liters of water
- 1 large stick of cinnamon
- 80 g ground coffee (café de olla, if you can find it)
- 1 piloncillo cone (or sugar, to taste)
- 1 pinch of salt (the secret nobody mentions)
Preparation
- 1
Bring the water and cinnamon to a boil in a clay pot, if you have one.
- 2
Add the piloncillo and let it dissolve completely.
- 3
Take off the heat, add the ground coffee, cover, and let it rest for 5 minutes.
- 4
Strain carefully into another pot — or straight into the cups.
- 5
Serve very hot, with bread, or with nothing but conversation.
[EXAMPLE — REPLACE] A sample recipe. The family’s café de olla deserves its own version: who brewed it, in which pot, and for which occasions.
Café de olla is not a drink — it’s an hour of the day. It is made for dawn departures, for long talks, and for welcoming whoever comes from far away. In a clay pot it tastes different — they say the clay lends it a little of its earth.
